Homemade Goji Juice

In a 12oz. glass of water or a juice bottle add one handful of Goji Berries and let them sit and hydrate for a few minutes or all day as you drink your own Goji Berry juice. Chewing the Goji's as you drink is a wonderful experience with four grams of fiber per handful. It's a great pick-me-up between meals and the most delightful way to enjoy a glass of water.

Ingredients:

1/2 cup dried Goji Berries
1/2 cup wheat berries
1 1/ cups reduced-sodium chicken broth
1 Tablespoon extra-virgin olive oil
1 Tablespoon walnut oil
3 Tablespoons lemon juice(from one large lemon)
1 Tablespoon apple-cider vinegar
2 large scallions (white & green parts) thinly sliced
1 crisp red-skinned apple, unpeeled, ncut into small dice
1 large celery stalk, diced
1/2 cup walnuts, toasted
1/2 cup finely minced Italian parsley leaves
Pinch ground cinnamon
1 teaspoon Agave
